Beetroot Dahi Poha

Ingredients:

  • 1 cup Poha (flattened rice)

  • 1 medium-sized Beetroot, grated

  • 1/2 cup Curd (Dahi)

  • 1-2 Green chilies, finely chopped

  • 1/2 tsp Mustard seeds

  • 1/2 tsp Cumin seeds

  • A few Curry leaves

  • 1-2 tbsp Oil

  • Salt, to taste

  • Fresh coriander leaves, for garnish

Instructions:

  1. Wash the poha under running water and drain well. Keep aside.

  2. Heat oil in a pan. Add mustard seeds, cumin seeds, and curry leaves. Let them splutter.

  3. Add grated beetroot and green chilies. Saute until beetroot is cooked and soft.

  4. Lower the heat, add curd (dahi) and mix well.

  5. Add the washed poha, salt to taste, and gently mix until well combined and heated through.

  6. Garnish with fresh coriander leaves.

  7. Serve hot as a nutritious breakfast or snack.
