KALINGAD SABZI (WATERMELON RIND CURRY)
Serves 3
Ingredients
- 1 cup watermelon rind, peeled and cut into ½ inch pieces
- 25g capsicum, finely chopped
- ¼ tsp fennel seeds
- ¼ tsp red chilli powder
- ¼ tsp turmeric
- ¼ tsp coriander powder
- ¼ tsp sugar
- Lemon wedges
- ½ tsp oil
- Salt, to taste
Instructions
- In a pressure cooker, heat oil, add the fennel seeds. When the seeds begin to crack, add capsicum and sauté.
- Toss in the watermelon rind and sauté for a minute. Add the spices and mix well.
- Pressure cook on medium heat for 15 minutes.
- Add sugar, a few drops of lemon, mix well.
- Serve hot.
