KALINGAD SABZI (WATERMELON RIND CURRY)

Serves 3

Ingredients

  • 1 cup watermelon rind, peeled and cut into ½ inch pieces
  • 25g capsicum, finely chopped
  • ¼ tsp fennel seeds
  • ¼ tsp red chilli powder
  • ¼ tsp turmeric
  • ¼ tsp coriander powder
  • ¼ tsp sugar
  • Lemon wedges
  • ½ tsp oil
  • Salt, to taste

Instructions

  1. In a pressure cooker, heat oil, add the fennel seeds. When the seeds begin to crack, add capsicum and sauté.
  2. Toss in the watermelon rind and sauté for a minute. Add the spices and mix well.
  3. Pressure cook on medium heat for 15 minutes.
  4. Add sugar, a few drops of lemon, mix well.
  5. Serve hot.
