Mango Chia Pudding

Ingredients:

  • 1 ripe mango, peeled and diced

  • 1/2 cup chia seeds

  • 2 cups milk (or almond milk for a dairy-free option)

  • 1-2 tablespoons honey or maple syrup (optional, depending on sweetness of mango)

  • 1/2 teaspoon vanilla extract (optional)

Instructions:

  1. Blend the diced mango in a blender until smooth.

  2. In a bowl, mix together chia seeds, milk, honey or maple syrup, and vanilla extract.

  3. Stir in the blended mango puree until well combined.

  4. Cover and refrigerate for at least 2-3 hours, or overnight, until the chia seeds have absorbed the liquid and the mixture has thickened to a pudding-like consistency.

  5. Serve chilled, topped with additional mango slices or other fruits if desired.
